    摘要:

    諾如病毒(Norovirus,NoVs)是引起人類非細菌性急性腸胃炎的主要病原體,貝類是NoVs傳播的主要載體,食用NoVs污染的貝類易造成食源性疾病,引發食品安全問題。已有研究結果表明,貝類中有類似人類組織血型抗原的NoVs受體,易與諾如病毒結合,常規的貝類凈化加工方法很難將NoVs從貝類體內除去。本研究總結分析了貝類中NoVs的積累、NoVs的分布及季節性、NoVs與貝類的結合機制等,總結了貝類中諾如病毒的賦存特性,綜述了貝類中諾如病毒消減控制的最新進展,旨在建立有效可行的貝類中諾如病毒的消減控制技術,最終為保障消費者貝類食用安全提供支撐。[中國漁業質量與標準,2023, 13(3):53-59]

    Abstract:

    Norovirus (NoVs) is the main pathogens of non-bacterial acute gastroenteritis in humans, the shellfish is the main vector of NoVs transmission, and consumption of NOVs-contaminated shellfish can easily cause food-borne diseases which leads to food safety problems. Studies have shown that there are NoVs receptors similar to human tissue blood group antigens in shellfish, which are easy to bind to norovirus, and it is difficult to remove NoVs from shellfish by conventional purification processing methods. In this paper, the accumulation of NoVs in shellfish, the distribution and seasonality of NoVs, and the binding mechanism of NoVs and shellfish were collected and sorted out. The descriptive characteristics of NoVs in shellfish were summarized, and the latest progress of NoVs elimination control in shellfish was reviewed, aiming at establishing an effective and feasible elimination control technology of NoVs in shellfish, which ultimately provides a support for ensuring the shellfish consumption safety for consumers.
